If you like oatmeal cookies, you will love a new twist on an old favorite!
This Oatmeal Butterscotch Cookies recipe gives you the sweetness of butterscotch and the healthy benefits of an oatmeal cookie. Another great benefit is the sweet smell it leaves in your kitchen!
What I also liked about this recipe is you didn’t need to bring out your heavy mixer. The hand mixer (affiliate) worked just fine — plus a little elbow grease!
Oatmeal Butterscotch Cookies
Ingredients:
- 3 cups Rolled Oats
- 1 cup Butterscotch Chips
- 2 Eggs
- 3/4 cups Butter, melted
- 3/4 cups Sugar
- 3/4 cups Brown Sugar
- 1 teaspoon Vanilla Extract
- 1 1/4 cups All-Purpose Flour
- 1 teaspoon Baking Soda
- 1/2 teaspoon Ground Cinnamon
- 1/2 teaspoon Salt
Directions:
- Preheat oven to 375 degrees.
- In a mixing bowl, beat the melted butter, sugar and brown sugar together.
- Add the eggs and vanilla, beat together.
- In a separate bowl, combine the flour, baking soda, cinnamon and salt.
- Gradually add the flour mixture to the egg mixture until it’s well blended.
- Stir in the oats and butterscotch chips.
- Using a teaspoon, scoop out the dough and place on an ungreased cookie sheet (affiliate).
- Bake for 8-10 minutes or until the edges are browned.
- Remove from cookie sheet immediately and let cool.
Here’s what the recipe looks like…
After you have preheated your oven to 375 degrees, you are ready to start putting the cookies together.
In a mixing bowl, beat the melted butter, sugar and brown sugar together. I used a hand mixer for this step.
Then add the eggs and vanilla. Using the hand mixer, combine these ingredients.
In a separate bowl, combine the dry ingredients (flour, baking soda, cinnamon and salt).
A little at a time, add the flour mixture to the egg mixture. Mix together at every step.
Your dough will look like this when it’s all incorporated.
Time to add the butterscotch chips and rolling oats!
Mix together and prepare to form the dough into cookies.
Using a teaspoon, place the cookie dough on an ungreased cookie sheet. Cook for 8-10 minutes or until the edges start to turn brown.
Remove the cookies right away so they don’t continue to cook on the cookie sheet.
This recipe makes almost 30 cookies!
